We started pouring this by the glass in 2019 at Sabor, the same year this wine won Best Cava in the Wines From Spain Awards.
Established in 1923, Perelada is one of Spain's most dynamic wineries and principal Cava producers, which is still family-owned and run.

Founded in 1927 by eleven growers, Bodegas Protos (formerly Ribera de Duero) is the oldest winery in Ribera. Ribera del Duero now, of course, is universally recognised as one of Spain’s pre-eminent regions.
Protos has been on the Sabor list since we opened, made from exclusively from 35 to 40-year-old vines of Tinta Fina (the locals’ name for Tempranillo).

A small, quality-focused Bodegas situated in Chipiona, a small coastal town close to Sanlucar de Barrameda. Unlike many other sherry houses, Cesar Florido own all their own vineyards.
Unlike most Creams, which are blends of Oloroso and Pedro Ximenez, this is a blend of approximately 75% Oloroso and 25% Moscatel. This is due to the location of Cesar Florido’s winery – which is in Chipiona, the home of Moscatel, and makes for a fresher, more floral style.
